Hot Dog Bun


Ingredients:
275g Bread Flour
50gm Multipurpose Flour
50gm Castor Sugar
1½ tsp Instant Yeast
1/4 tsp Salt
240 ml fresh milk
12 pcs hot dog -Boil
1 egg yolk + 1 tsp honey-for egg wash

1.Mix all the dry ingredients in the mixing bowl, using low speed.
2.Slowly pour fresh milk until finish and increase to medium speed.
3.Knead for 15 minit and rest for 1 hours.
4.Remove the dough from the bowl and punched out all the excessive air.Divide into 12 portions.
5.Roll the dough with hot dog and rest for 15 minit. Wash the bun with Eggs wash.
6.Bake for 180 degree for 30 minit or until golden brown.


Moon Cake Jelly




Ingredients:
Eggs Yolk
300 ml water
2 tbsp whipping cream/Fresh Milk (50ml -Don't forgot to reduce 300 ml water)
1 tsp Jelly Powder
5 tbsp Sugar
1 Drop Orange Colour / Steam Mash Carrot.

1.Boil all the ingredient and pour into the round mold.Keep aside.

Pandan Jelly-Middle Layer
600 ml water
4 tbsp whipping cream/fresh milk (100 ml-don't forgot to reduce 600 ml water)
2 tsp Jelly Powder
10 tbsp Sugar
1 Drop Green Colour
½ tsp Pandan Paste

1.Boil all the ingredient.Keep it cold for a while.
2.Put egg yolk jelly into Square mold (Medium size) and pour the jelly.Keep aside.

Cendol Jelly-Outer Layer
850 ml water
6 tbsp whipping cream /Fresh milk ( 150 ml-don't forgot to reduce 850 ml water)
3 tsp Jelly powder
3 tbsp sugar
50 gm Gula Melaka
100 gm Cendol

1.Boil all the ingredient.Keep it cold for a while.
2.Put Pandan jelly into Square mold (Big size) and pour the jelly.Keep aside.



Simple Cockles Soup

Ingredients:
1 Kg Cockles
2 Chili
2 Garlic -Cut into thin slice
1 Shallot -Cut into thin slice
2" Garlic -Cut into thin slice
1 Lemongrass
1 pcs Asam Pcs
5 Cup Water
Salt and msg
2-3tbsp Chinese Cooking Wine -Optional

Method:
1.In a cooking pot, boil water until boiled and add in all the ingredients except Cockles.
2.Boil until fragrant, then add in cockles ,salt and msg,Spark some celery.

Swirl Green Tea Steamed Bun


Plain Dough:
250gm Bao Flour
1 tsp Yeast
3 tbsp Sugar
130ml Water
2 tbsp Cooking Oil

Green Tea Dough:
250gm Bao Flour
1 tsp Yeast
3 tbsp Sugar
130ml Water (Stir with green tea Powder)
1½ tsp Green Tea Powder
2 tbsp Cooking Oil

Method:
1.Mix both ingredients separately till form soft dough.Rest for 1 hrs.
2.Plate the dough into 8" x 10".
3.Wrap Green Tea dough into plain dough.Roll like swiss roll.
4.Divide into 14 portion and rest for 20-25 minit
5.Steam with high heat 20 minit.

Sambal Turmeric Eggs


Ingredients:
5 eggs-  (Hard boil eggs)
3 pcs Dry Chilli
3 Shallot
2 Garlic
2" Fresh Turmeric
1" Belacan (Optional)
2 potato-cut into wages -Frieds (Optional)
5 tbsp Asam Jawa Juice
Salt and Sugar
Cooking Oil

Method:
1.Blend dry chilli, garlic,shallot, and fresh turmeric.
2.IF you want to put potato -Peel, cut into wages and deep fry.
3.In a wok, saute blended ingredients until fragrance.
4.Add in asam juice and cook until gravy thick .Then add in salt and sugar.
5.Add in eggs and fried potato.

Rendang Chicken

Ingredients:
½ Whole Chicken-Cut into Pcs
2 tbsp Fried Coconut (Kerisik)
1 pcs Lemongrass
3pcs Dry Chili -Sock With hot water
5 Shallot
3 Garlic
1" Fresh Turmeric
1" Ginger
200ml Coconut Milk
50 ml Water
Salt and Sugar
Cooking Oil
2 pcs Turmeric Leave -Cut into small pc

Methods:
1.Blend Chill,shallot,garlic,fresh turmeric and ginger.
2.In a work, saute blended chili and lemongrass until fragrance.Use small heat to saute.
3.Add in Chicken and mix until cooked.
4.Add some water if gravy dry.
5.Add in fried coconut(Kerisik) and saute until combine.
6.Last add in coconut milk,salt and sugar.Cook Until gravy thick.
7.Add in turmeric leave and serve.
